Dual-grit sharpening stones have a different grit on each side of the stone. Different grits on the same stone makes it easier to transition from one grit to the next and reduces the space required to store multiple stones. Sharpening stones are often used with oils or water to lubricate the surface which minimizes clogging to ensure a smooth, sharp edge without scratching.

India/Soft Arkansas Dual-Grit Oilstones
India/soft Arkansas dual-grit oilstones have one abrasive on each side of the stone, each having a different grit. India stones are made with aluminum oxide abrasive that provides light material removal for deburring and cutting edge preparation. Soft Arkansas is used for final honing to create a sharp, long lasting cutting edge. Oilstones are lubricated using abrasive stone oil to push the loosened abrasive and metal shavings away from the stone's surface to create a smooth, polished blade. Oil is applied to surface before sharpening and generally takes longer to sharpen than waterstones.
